How to Make the Perfect Cannabis Chicken Meal for National Chicken Month

Ah, chicken, how we love thee! Let us count the ways…or not. Who’s got time for counting? September is National Chicken Month, which means there are all kinds of cannabis chicken dishes you could be enjoying!

Oddly enough, this past August was a big month for chicken. After the #ChickenWars exploded between Popeye’s, Wendy’s, and Chick-fil-A, Popeye’s ran out of their brand new chicken sandwiches in just 16 days. They’d planned to be stocked through September — which would have been perfect for National Chicken Month — but alas, it was not to be.

But while they’re busy restocking their supply, you can make your own homemade chicken sandwich, complete with cannabis infusion. We’ll have that recipe and more in this post on how to make the perfect cannabis chicken meal for National Chicken Month. Buk-Buk-Buk-Buk-bu-KAW!

Fun Facts About Chicken

Before we launch into our cannabis chicken recipes, enjoy these fun facts we learned from an article in Smithsonian Magazine. It will help you get in the proper reverential state of mind that the chicken so justly deserves!

  • Archaeological evidence suggests that human beings started domesticating chickens somewhere between 7000 and 10,000 years ago. The earliest chicken fossil bones are believed to have been found in China, and they date back to around 5400 B.C.
  • Researchers believe that the domesticated chicken is a direct descendant of the red junglefowl.
  • The ancient Romans believed that a chicken’s behavior could help you predict the future, especially during wartime.
  • The ancient Egyptians used to hang chicken eggs in their temples with the belief that they would help create beneficial river flooding.
  • Chicken is the most consumed meat in America.
  • The world’s chicken population outnumbers the human population by 3 to 1.

Cannabis Pan-Fried Chicken

2 pan fried chicken

(Adapted from Cloudy Kitchen)

What You Need

  • 4 eggs
  • 1/2 cup of refined wheat flour
  • Salt and pepper
  • Any herbs you want (classic ones to add are white pepper, garlic powder, ground ginger, thyme, celery salt, dried oregano)
  • Cannabutter (for injection)
  • Your choice of cooking oil (vegetable, olive, coconut)
  • 6 chicken breasts or thighs
  • Meat injector (You’ll need this to inject the cannabutter directly into the chicken before frying. This will protect the potency of the cannabinoids while your chicken is cooking,)

How to Make it

  1. Beat eggs in a bowl.
  2. Mix the flour and all your spices and herbs in a separate bowl.
  3. Melt your cannabutter over low medium, then let it rest for about 8 minutes until it cools off. Fill your meat injector with the melted butter, and then inject each piece of chicken with the butter. Inject in multiple spots to get an even distribution of cannabutter.
  4. Place one piece of chicken into the beaten egg bowl and coat it. Then coat it in the flour-spice-herb mix on all sides. Let it rest on a paper towel. Coat the remaining pieces of chicken.
  5. Put your pan on medium heat, then add between 1/8 inch and 1 inch of oil to the pan. Use a deep-fry thermometer to test the temperature of your oil, making sure it gets no hotter than 350 degrees F.
  6. Add chicken to the frying pan, using tongs.
  7. Frying times may vary, but you basically want to spend between 5 to 6 minutes on each side (turning the chicken every 2 minutes or so), or until each side reaches a golden brown. Since pan-frying chicken is a delicate art, use this video to help you out.

 

  1. Use tongs to remove the chicken pieces when they’re done and place them on a cooling rack that’s resting on top of a baking sheet to catch the oil. Place wax paper on the baking sheet for easy cleanup.

Cannabis Fried Chicken Sandwich

(adapted from Today – you’ll need a meat injector for this one as well)

What You Need

  • 6 cups of grapeseed oil
  • 4 cups of buttermilk
  • 1 cup of flour
  • 1 cup of grits
  • 1 tbsp of onion powder
  • 1 tbsp of garlic powder
  • 1 tbsp of smoked paprika
  • 1 teaspoon of salt, plus an additional pinch
  • Pinch of black pepper
  • 1 egg
  • 4 boneless, skinless chicken breasts
  • 4 medium brioche buns
  • Mayonnaise
  • Spicy sliced pickles
  • Cannabutter

How to Make it

  1. Pour oil into a deep pan to 1/4 full over medium heat. Using a deep-fry thermometer, heat the oil to 320 degrees F.
  2. Whisk buttermilk, flour, grits, and egg in a mixing bowl until smooth. Whisk in onion powder, garlic powder, paprika, and salt.
  3. Inject each chicken breast with cannabutter. Season chicken on both sides with salt and pepper, then dip each one individually into your batter.
  4. Fry your chicken, two at a time, until the outside is golden brown and the interior is cooked through, about 5-6 minutes on each side.
  5. Spread mayo over the brioche buns, then adds in the chicken and pickles. Season with salt and then serve!

Cannabis Buffalo Wings with Ranch Dressing

(Adapted from The Wellness Soldier)

What You Need for the Ranch Dressing

  • 1/2 cup of mayo
  • 1/2 cup of sour cream
  • 1/2 cup of buttermilk
  • 1 tsp of dried dill weed
  • 1/2 tsp of dried parsley
  • 1/2 tsp of dried chives
  • 1/4 tsp of onion powder
  • 1/2 tsp of garlic powder
  • 1/4 tsp of fine sea salt
  • 1/8 tsp of fine, cracked pepper

Mix everything together and voila! You got your dressing. It should keep in the refrigerator for 1-2 weeks.

What You Need for the Cannabis Buffalo Wing Sauce

  • 2/3 cup of Frank’s Red Hot Buffalo Wing Sauce (or something similar)
  • 1/2 cup of cold cannabutter
  • 1 1/2 tbsp of white vinegar
  • 1/4 tsp of Worcestershire sauce
  • 1/4 tsp of cayenne pepper
  • 1/8 tsp of garlic powder
  • Salt to taste

How to Make It

Mix everything together in a small pot and let it simmer over low heat, stirring.

Once it begins to bubble, remove from heat and set aside.

As far as the chicken wings, the sky’s the limit on how you want to make them: baked, fried, deep-fried, boiled, etc.

Cannabis Chicken Caesar Salad

(adapted from Quarto Knows)

What You Need

  • 3 tbsp EGO Brands Honey Mustard (cannabis-infused)
  • 2 tbsp fresh lemon juice
  • 1 tsp of Worcestershire sauce
  • 2 cloves of smashed garlic
  • 6 tablespoons of olive oil
  • 1/4 cup of grated Parmesan cheese, plus a bit more for garnish
  • Salt and black pepper
  • 2 romaine lettuce hearts, chopped
  • 1 cup of chopped or shredded cooked chicken
  • 2 cups of croutons

How to Make It

  1. Using a food processor, puree the mustard, lemon juice, Worcestershire sauce, and garlic.
  2. While the machine is still running, drizzle olive oil into the mix.
  3. Transfer dressing to a jar and mix in Parmesan cheese. Add salt and pepper to taste
  4. Place romaine lettuce hearts in a salad bowl and toss with the dressing, coating it.
  5. Top salad with chicken and croutons and serve.

Cannabis Chicken Soup

What You Need

  • 1/2 lb. of chopped, cooked chicken breast
  • 1/2 cup of chopped celery
  • 7 1/2 cups of chicken broth
  • 6 droppers of cannabis tincture
  • 1/2 tsp of dried basil
  • 1/2 cup of chopped carrots
  • Salt and pepper
  • 1/2 cup of chopped onion
  • 1 tablespoon of butter (for additional potency, you can make this cannabutter)
  • 1/2 tsp of dried oregano
  • 2 cups of vegetable broth
  • 1 1/2 cups of egg noodles

How to Make It

  1. Using a large pot, melt the butter over medium heat, making sure it doesn’t reach boiling point. Use the butter to cook both the onion and celery for 5 minutes.
  2. Add chicken and vegetable broths, stirring everything together.
  3. Add noodles, basil, salt, and pepper to taste, chicken, oregano, carrots, and cannabis tincture.
  4. Bring soup to a low boil, then reduce to low heat and let it simmer for 20 minutes.
  5. Remove from heat and serve.

REMINDER: all the cannabis dosings listed for these recipes are just recommendations. You may need to add less or more, depending on your tolerance level.
